Elizabeth Carbajal-Sanchez

Elizabeth Carbajal-Sanchez, 42, of La Salle, passed away July 31, 2024 at OSF St. Anthony’s Medical Center surrounded by family.

Mass of Christian burial will be 10:00 AM Saturday at St. Hyacinth’s Church in La Salle with the Very Rev. Thomas Otto officiating. Burial will take at a later date in Mexico. Visitation will be in 4-8:00 PM Friday at the Hurst Funeral Home in La Salle with a rosary to be recited at 5:00 PM.

Elizabeth was born in Recoveco, Sinaloa Mexico born November 2, 1981 to Juan and Heriberta (Sanchez) Carbajal. She worked as an assistant manager at iHop in Peru. She was a member of St. Hyacinth’s Church in La Salle. She loved music, Snoopy, and orchids. She liked to be out of the house and was always busy working. She loved to cook and take long walks. Her especially enjoyed taking care of her grandson.

Elizabeth is survived by two sons Maxwell Ivan (Liz Corona) Santiago of Peru and Ivor Serrano of La Salle; two daughters Stephanie Carlos of La Salle and Yoselin Carlos of La Salle; one grandson Romeo Valentino Santiago; his mother Heriberta Sanchez of La Salle; three brothers Jose (Patricia) Carbajal-Paredes of Moline, Rodolfo (Nereyda) Carbajal of Mexico, and Juan (Flor) Carbajal of Mexico; and three sisters Estela (Pedro) Gonzalez of Spring Valley, Rubelinda Carbajal-Sanchez of Mexico, Osaira (Israel) Castelan-Carbajal of La Salle.

She was preceded in death by her father Juan, one son Jose Luis Santiago, and her paternal and maternal grandparents.
